Barista Ezra is the mind and spirit behind Galileo’s Coffee — a clinical research scientist by training, an entrepreneur by instinct, and a craftsman of coffee by passion. Holding a Bachelor of Arts in Biology from Washington & Jefferson College and a Master of Science in Oral and Craniofacial Biology, his academic foundation is rooted in precision, analysis, and an appreciation for complexity. That same scientific discipline informs his approach to coffee: measured, intentional, and endlessly curious. Beyond academia, Ezra has built a reputation as a strategic business entrepreneur and small investor, carrying a quiet but proven track record of success across his ventures.

Galileo’s Coffee was not created as a financial pursuit, but as an extension of a personal ritual. Our mornings are anchored in the pursuit of the perfect cup — continuously refining grind size, extraction time, milk texture, and the nuanced tones of bitterness that each bean reveals. Our fascination lies particularly within European and Italian café culture, where elegance, history, and flavor coexist effortlessly. To us, coffee is not rushed consumption; it is ceremony, memory, and identity.
At Galileo’s Coffee, we bring that philosophy to life. Our vision is to introduce a refined mobile European café experience to the greater Pittsburgh area. One rooted in clean design, thoughtful engineering, and uncompromising quality. More than a truck, Galileo’s is an invitation into a sacred ritual.

The Galileo Sprinter Van
Engineering Meets Italian Craft
When we acquired this retired specialty food truck in 2024, it was far more than a vehicle — it was an engineering foundation waiting to be reawakened. Over the course of a year, engineers, outfitters, technicians, and coffee professionals worked together to transform it into what it is today: a state-of-the-art mobile café powered by clean battery energy and refined by intention.
At its core, the Galileo Sprinter runs on an advanced high-capacity battery system paired with industrial-grade inverters and intelligent automation controls. This EV-inspired infrastructure allows us to operate quietly and efficiently, reducing reliance on traditional generators while maintaining the power needed to run commercial refrigeration, warming systems, espresso equipment, and brewing stations seamlessly. It is clean. It is precise. It is engineered for performance.
Inside the truck, craftsmanship continues. Our espresso program is driven by a two-group Astoria Avant Pratic, delivering consistency, temperature stability, and the pressure control required for refined extraction. Beans are ground fresh through the Mazzer Super Jolly, a grinder respected worldwide for its reliability and precision. For brewed coffee and specialty preparations, we rely on professional-grade Bunn brewers, grinders, and press systems — ensuring that whether espresso-based or pour-over, every cup meets our standards.
The refrigeration, freezer, and warming systems are industrial-level and intelligently managed, allowing us to preserve freshness, maintain safe temperatures, and serve pastries and beverages at their ideal state throughout the day. This capacity enables Galileo’s to produce up to 1,000 cups of coffee and baked goods daily — without sacrificing quality.
Design was never secondary. Inspired by Italian tradition and artistry, the truck reflects the elegance of European café culture. The name “Galileo’s” honors Italian ingenuity — where science, art, and discovery coexist. Just as Galileo studied precision and movement, we’ve approached this café as a study in balance: power and beauty, engineering and ritual, mobility and tradition.
